MALTAGLIATI WITH SUMMER VEGETABLES
Cook with Vittoria and Giulia the Maltagliati with Summer vegetables, a fresh and light pasta dish perfect for these hot days. The Maltagliati is a kind of pasta that was born to not waste any piece of dough used while making the tagliatelle. When you make the tagliatelle generally the dough is rolled up and the edges are too short to obtain the right tagliatelle size. It’s for this reason that this part of the dough was used to make what today we all call and know as maltagliati, pieces of pasta irregularly cut with also an uneven thickness.
The Ingredients for 4 people:
- 300 gr or 11 oz of flour
- 3 eggs
- 2 carrots
- 1 red pepper
- 2 artichockes
- basil
- Salt & Pepper as needed
- Evo Oil as needed
